World’s best restaurant, Noma in Copenhagen, set to close, says chef Rene Redzepi

One of the most creative restaurants in the world -which has three Michelin stars and has put ingredients such as Finnish reindeer moss, calf fibers and live ants on its menu- will close its doors at the end of 2023, its owner has announced.

Rene Redzepi, 45, is widely considered one of the world’s best chefs, and thanks to his alchemy in the kitchen, Noma has been named the world’s best restaurant five times, and lunch with wine pairing currently costs 5,500 kroner. Danish, around £653.

He said his flagship Copenhagen restaurant, which first opened in 2003, will become a giant test kitchen, dubbed Noma 3.0, in 2024, only opening in 2025 for short periods at a time.

In a fan Q&A on his own page, he admitted that turning his successful business, which has employed full-time pickers, gardeners and researchers to inspire new dishes, into a progressive food lab was daunting.

He said that he had spent the last two years planning the ad, saying, “It’s scary and it’s weird, but I know it’s the right thing to do.” As soon as the pandemic hit, I had a feeling it was time for something different.’

Currently in Tokyo, where a Noma pop-up restaurant will open for five months, the celebrity chef said he was looking to the future.

In an interview with the New York Times, Redzepi called the global food scene “unsustainable.”

Noma 3.0 will focus “on innovation, understanding of nature and human growth,” he told fans on Instagram.

“We have an opportunity with this to do some incredible work over the next two to three decades.”

In 2021, the Copenhagen restaurant took home first place in the World’s 50 Best Restaurants Awards, and Danish restaurant Geranium was named number one in 2022. Noma previously topped the list in 2010, 2011, 2012, and 2014.

The latest news is the third incarnation of Noma. In 2017, the restaurant closed its original location near the Danish capital’s Opera House and reopened in the hippie Christiania neighborhood of Copenhagen.

In 2021, the Copenhagen restaurant took home first place in the World’s 50 Best Restaurants Awards, and Danish restaurant Geranium was named number one in 2022.
