An Australian pastry chef has revealed how to make an adorable unicorn cake that looks like it was made by a professional for under $50.

Tigga MacCormack, co-owner of Cake for Days, went viral last year by showing her huge following how she made the ‘really cute’ cake and recently shared how others can create the gift at home with Mama Mia.

The Melbourne baker used affordable items that can be bought at the supermarket, including a Coles or Woolworths mud pie.

“This is called a crumb coat because it’s used to catch the crumbs and give you a nice smooth surface for the top layer of frosting to go on later.”

For the unicorn’s mane, add buttercream to a few small bowls and a few drops of different food coloring to each and mix well – Tigga used pink, blue and purple.

‘Fold the merry wrapper in half, roll it up like a sausage and wrap around the edges and twist. You will have one twist left on each side. Cut one of those sides with scissors,’ she said.

She places the frosting “sausage” in a pastry bag with the cut end down and places the “rainbow swirl” on the unicorn where the mane would be.

Finally, Tigga added some sprinkles to the unicorn’s mane which she said is an optional step but looks “super nice.”

RECIPE: How to Make Tigga Mac’s Unicorn Cake for Under $50

what you will need

  • Mud pie shop bought from Coles and Woolies. Any flavor of your choice.
  • Some piping bags and a piping tip tip, which you can easily buy at Spotlight, Woolies, or online. For the mouthpiece, I used the ‘2d’ size
  • Small bag of Smarties
  • handful of sparks
  • Knife to cut the cake and spatula to smooth the icing.
  • Three food coloring options
  • youunicorn ornament kit. I bought mine from Coles for $5 and it includes the ears, horn, and eyes.
  • Ice formation of some kind. You can buy two canisters of store-bought buttercream frosting of your choice, just make sure it’s smooth

Method

  1. Cut the cake in half off center. The larger side will be the face/head and the smaller side will be the nose. Cut the cake after it’s been in the fridge for a few hours so it’s neat.
  2. Put a small dot of frosting on your cake board which will act as a “glue”. Place the largest slice on the board first, and then place the smallest slice next to it and flatten them down.
  3. Shave the sides a bit to make it look more like a unicorn head.
  4. For the first ‘crumb layer’ of frosting, I use a pastry bag, add some of the smooth buttercream into the bag and pipe small squiggles along the length of the cake, using a spatula to smooth them out.
  5. Once this first layer is applied, store it in the freezer for five minutes.
  6. After five minutes in the freezer, apply a second coat of frosting, using the same method as the first coat, smoothing it out as best you can.
  7. Use a new, clean, damp cloth to wipe away any excess icing left on the edges of the cake pan so it’s nice and clean.
  8. Place your cake toppers on the cake. For the nose, choose two brown Smarties and place them on the smaller portion of the cake, also known as the nose area.
  9. Get small bowls, pipe some buttercream frosting in each and add a few drops of different food coloring to each bowl and mix well.
  10. Place a large sheet of cheery wrap on your kitchen bench. Pipe the pink frosting in a line down the middle of the merry wrapper.
  11. Add a line of purple frosting next to the pink frosting on the cheery wrapper. Finish the same process with the blue glaze.
  12. Fold the merry wrapper in half, roll it up like a sausage, and wrap around the edges and twist. You will have one twist left on each side. Cut one of those sides with scissors.
  13. Place the Glase Glas Wrap sausage into the piping bag, cut end down. When you channel, it will look like a rainbow swirl.
  14. The final step is to add some sprinkles to the unicorn’s mane. This is optional, but it looks great!
