A mum has shared a 'groundbreaking' idea for cooking protein-packed meals – and the simple recipe makes seven meals for $40.
Kelley wanted to make an easy and delicious meal for her weekly lunch, so she decided to cook chicken and rice bowls with Greek yogurt and cheese.
She first went to her local Aldi to gather the ingredients: jasmine rice, chicken stock, chicken breast, Greek yogurt, cherry tomatoes and tasty cheese.
Kelley also used salt, pepper and chili flakes to season her dish.
The mom recommends “cooking” the food in oven-safe glass containers so it can be stored immediately in the refrigerator and requires minimal cleanup.
A mom has shared a 'game-changing' idea for high-protein meal prep – and the simple recipe makes seven meals for $40
She first grabs a few glass containers and adds half a cup of rice, a cup of chicken stock and diced chicken breast.
She then sprinkles salt and pepper to taste, along with a tablespoon of Greek yogurt, pesto and a handful of cherry tomatoes.
'Mix it well and sprinkle some over it chili flakes,” she advised.
Kelley then places the containers in the oven 40 minutes at 175C – but it's best to check your food is done before taking a bite.
The mother did not cover any of the meals with aluminum foil before placing them in the oven.
'These taste so good, I put them in the fridge and eat them throughout the week!' said Kelley.
Many thanked the mother for the recipe and shared their own substitutions.
“I made this but I used 50 grams of egg white pasta instead, it was so good,” said one.
“Use broth instead of broth for extra protein if your budget allows!” another recommendation.
