An Australian MasterChef winner has lifted the lid on his favorite margarita of the season, and the pairings he must prepare to pair it.

Chef Justin Narayan, who was the winner of the Channel 10 cooking show in 2021, returns to the kitchen to talk about Australia’s hottest new drink, known simply as Jimmy’s Margarita.

The new Jimmy’s Margarita tosses out the agave syrup and replaces it with pineapple.

Chef Justin Narayan, who was the winner of Channel 10’s cooking show in 2021, is back in the kitchen to talk about Australia’s hottest new drink, known simply as Jimmy’s Margarita.

Jeremy’s logic is that the iconic marg uses lime juice, but that made it very tart, while the Tommy marg uses agave syrup, which is super smooth thanks to the sugar syrup but dulls the tequila’s natural citrus notes.

The use of Australian pineapple creates a combination of pine and lime that really enhances the tequila’s natural citrus notes. And chef Narayan is a big fan.

So what do you pair it with?

‘With Jimmy’s margarita it would have to be the quintessential taco pairing, specifically tacos al pastor. The sweetness and tartness of Jimmy’s pair perfectly with the charcoal and spice of the classic pork taco,” he told FEMAIL.

How do you make a Jimmy’s Margarita?

Ingredients:

50ml el Jimador

30ml freshest lime juice (about the juice of 1 whole lime)

20 ml of pineapple syrup: 150 g of white sugar and 150 ml of pineapple juice

Pinch of salt

garnish options

herbal oil drops

Shichimi Spice Mix

Method:

Start by freezing your Coupettes or glasses of choice in the freezer for one to four hours.

Put the Jimador, the lime juice and the pineapple syrup, and the salt in a cocktail shaker, add one of the rinds of the squeezed limes. Fill to top with ice.

Shake as hard as possible and strain into chilled cocktail glasses. We like a Coupette, but you can pour over ice if you prefer.

If you’re looking to stick to the classic margarita this summer, Mr. Narayan would pair it with a plate of fresh seafood.

You can’t go wrong with a classic margarita and a fresh seafood platter. Citrus and shellfish are a winning combination,” she said.

To make the classic you will need 45 ml of El Jimador Reposado, 15 ml of Cointreau/triple sec, 30 ml of fresh lime juice and 10 ml of Herradura agave nectar.

In an ice-filled cocktail shaker, add all ingredients and shake to mix. Strain into a margarita glass filled with fresh ice and rimmed with salt.

Fans of the spicy margarita may want to enjoy their favorite drink alongside spicy chicken wings.

‘My recommendation for the spicy margarita is to double the spice. Some spicy chicken wings are the best,” Narayan said.

“I guess if you’re making a spicy margarita you love spice, but the contrast between the hot spice of the wings and the cool, refreshing spice of the marg is an addictive experience.”

For something truly unique—and summer-friendly—a watermelon margarita should be paired with a baked feta pasta.

I’m thinking of something super rich and creamy. A baked feta pasta hits the spot. The contrast between the fresh watermelon and the rich dairy will make this margarita stand out,” she said.

And for a passion fruit margarita you’ll want to top it off with a baked New York cheesecake.

‘This is going to sound a bit out of character, but trust me. A good baked New York cheesecake. The citrus of the passion fruit and the slight tartness of the cheesecake and the contrast of texture work very well. It’s also a great excuse to order a margarita with dessert,” she explained.
