A woman who lost 130 pounds after a low-carb diet has revealed the recipe for the 90-second cinnamon roll she eats when she craves dessert.

Mayra Wendolyne, 39, of Laguna Beach, California, weighed 315 when she started her weight-loss journey in 2011. She lost 50 pounds in five months through diet and exercise.

Three years later, she switched to a low-carb, high-fat keto diet, which she continues to follow, and her weight now hovers around 185 pounds.

The self-taught chef and baker has more than four million followers on YouTube, Instagram and TikTok, where she shares her favorite recipes, including her favorite desserts.

Wendolyne, who is known online as 'Low Carb Love', then went viral on TikTok demonstrate how to make a low carb cinnamon roll in less than two minutes.

“I've lost over 50 pounds making these types of desserts,” she explained.

To make the cake, she whisked together melted butter, an egg and vanilla extract in a microwave-safe bowl.

Wendolyne added almond flour “to keep it low-carb and gluten-free,” baking powder “so we have that leavening agent,” and cinnamon “because, duh, it's a cinnamon roll.”

She also mixed a small packet of stevia into the batter, but she noted that you can use a powdered sweetener of your choice.

After giving the cake a good stir, she sprinkled the cake with a mixture of cinnamon and powdered sweetener, forming a “little swirl.”

“This isn't going in the oven,” she explained. “It goes in the microwave for 90 seconds.”

While the cinnamon roll was cooking, she made a “super quick little cream cheese frosting” by mixing softened cream cheese with powdered sweetener and almond milk.

90 SECONDS CINNAMON ROLL

Ingredients:

Cake

  • 1 tbsp butter, melted
  • 3 tablespoons almond flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon powdered sweetener
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Cinnamon topping

  • 1/2 tbsp cinnamon powder
  • 2 tablespoons powdered sweetener

Cream cheese icing

  • 2 oz cream cheese softened
  • 1 tablespoon powdered sweetener
  • 1 tbsp unsweetened almond milk

Directions:

  • Melt the butter in the microwave and beat in the egg and vanilla extract
  • Add all the dry ingredients and mix until incorporated
  • Sprinkle with cinnamon topping
  • Microwave for 90 seconds
  • Spread with cream cheese frosting

Wendolyne then removed the cake from the microwave and poured the frosting into a plastic bag, cutting off the tip to make a makeshift piping bag.

“Now we're freezing,” she said as she was making a swirl design with the frosting to give the cake a classic cinnamon roll look.

She ended her video by grabbing a fork and taking a bite of the dessert.

“Mmm, mmm, mmm,” she said.

Wendolyne's video has been viewed nearly 932,000 times and received more than 181 comments since it was posted on November 9.

'It functions! However, it requires a lot [cinnamon] and sweetener to give it flavor, otherwise it tastes 'eggy,'” one person responded.

'I worked hard for these results. I wish I could say it was easy, but it isn't,” she wrote in the caption.
