EXCLUSIVE: Elle MacPherson’s nutritionist spills on the supermodel’s very modest diet, which includes lemon water for breakfast, “superfood salad” for lunch, and a “little wild fish” for dinner

Ten years ago, supermodel Elle MacPherson visited Dr Simone Laubscher’s office on Harley Street in London with a bloated stomach and tears in her eyes.

As she approached 50, the Australian model no longer felt like herself and knew something had to change.

Dr. Laubscher told Daily Mail Australia she was stunned to see how dry Elle’s skin was when she came into her office, and that although she was “skinny”, she had a “little bloated belly”.

The naturopath and nutritionist formulated an anti-inflammatory diet for her, and a month later, Dr. Laubscher said she had become “a different person.”

“She walked into my office on Harley Street with all those shopping bags and she was beaming, and I thought yes, girlfriend, that’s the Elle I know,” she said.

The Sydney-born model went on to found her supplement company WelleCo, which formulates Dr. Laubscher.

The nutritionist said she started formulating super greens for Elle before she started the company, so it was a match made in heaven.

Before seeking her help, Dr. Laubscher said Elle was addicted to caffeine and sugar and had a lot of inflammation due to a leaky gut.

Elle MacPherson’s Daily Diet

Breakfast

Elle “breaks her fast” by drinking some water and lemon in the morning to hydrate.

She then gets her Super Elixir veggies and maybe a matcha tea.

Lunch

For lunch, she has a huge superfood salad with avocado, beetroot, and nuts.

Dinner

While Elle likes to eat raw foods as part of a largely plant-based diet, her nutritionist recommends that she have a hot meal in the evening.

This includes plenty of cooked vegetables, a source of carbohydrates such as rice or quinoa, and she will also eat wild fish a few times a week.

snacks

Her snack is a smoothie that contains her WelleCo vanilla or chocolate protein powder, a banana, avocado and almond milk.

She will sometimes have dark chocolate.

Leaky gut syndrome is a medically unrecognized condition in which the intestines become ruptured so that partially digested food, toxins, and insects leak into the bloodstream.

It can cause symptoms such as bloating, gas, cramping, food sensitivities, and aches and pains.

Elle has now healed her gut by taking WelleCo’s Super Elixir supplement every day, eating a largely plant-based diet with small amounts of fish, and eating as little sugar and caffeine as possible.

“She came to me over 10 years ago and we put her on a nutritional plan to get her better,” Dr. Laubscher explains.

“So as a naturopath, we gave her a core plan for eating. She wakes up and breaks her fast with my wellness water (water and lemon). Many people drink enough water, but they don’t hydrate well enough.

She will then use her nourishing protein powder or the Super Elixir (everyday veggies).

“For lunch, she’ll have a big superfood salad with some avocado, beetroot, nuts, and then she’ll have a hot meal at night. She’ll try not to eat anything raw.”

“Elle has a chef, but it’s hard being a vegan and getting the right amino acids so she eats fish, but not every day.”

Dr. Laubscher said her top tip for people who want to eat like Elle is to cut out non-organic products.

The supermodel eats organic food “100 percent” of the time, and while she used to be addicted to sugar, she now has no desire to eat it and has completely cut out junk food.

‘You should at least look at free range or organic, you don’t want added hormones because people are bad and we do bad things to the animals,’ explains Dr Laubscher.

‘So when it comes to fish, you don’t want farmed fish, because they also have hormones. You want wild fish, and it’s better to eat less protein and better quality.

“An easy protein option is organic eggs, they’re not expensive, you can get those instead of organic chicken, because that’s a bit expensive with the cost of living.”

‘Also look at your labels and stuff, but just really try to improve the quality, so eat less and have a higher quality.’
