Coles Australia launches ‘epic’ new premium feature to take on Woolies and Aldi
A ‘posh’ Coles supermarket has wowed shoppers with a unique in-store feature that rivals can’t match.
Coles Local in North Sydney has just opened a brand new bar where you can make your own pasta, with over seven different sauces.
Customers can choose from four types of ravioli: portobello with porcini mushrooms, spinach with ricotta, beef with vegetables or roasted pumpkin with grana padano.
Variations on linguine and fettuccine are also available.
You can add mascarpone cheese, gourmet feta, fior di latte or choose another cheese from the selection. There are also green olives, artichokes, fresh and marinated octopus and more
Customers are asked to use the provided packaging to select their fresh pasta, weigh it and then pay at the checkout.
“This gourmet pasta range is inspiring our customers in North Sydney and is available in 20 Coles Local stores across Victoria, New South Wales and Queensland,” a spokesperson told FEMAIL.
‘The pasta is produced in Melbourne by Alligator Brand, a pasta maker who has been making pasta for over three decades. They use only the finest produce, including free-range eggs and durum semolina from Bellata, NSW, to create a high-quality, delicious pasta with a great bite.

‘The filled pasta is made with local and seasonal ingredients, including Wagyu from Victoria, fresh buffalo mozzarella and Manjimup truffles from Western Australia, and premium aged Grana Padano and Pecorino Romano from Italy.’
Coles Local stores are more expensive than regular supermarkets and act as a ‘neighbourhood hub’ for the community.
Customers can help themselves to warm bread from the bread warmer, indulge in individual ice creams in the summer and have mochi, macarons and gelato cones for dessert.
Coles Local stores also have a pet section with treats for your furry friends.
The products sold in the store are designed to “connect with the needs of local customers,” Coles said.
In 2020, another local store opened in Rose Bay.
The location also offers delicious treats, from top-notch sourdough bread and sweets from Sydney stalwart Sonoma to Southeast Asian treats from Roll’d and pastries from traditional French bakery Noisette.

Steven Cain, former CEO of Coles, previously said the Coles Local format was designed to appeal to local tastes and preferences.
“Customers want us to make their lives easier, and this store offers our customers the convenience of a supermarket with the range of a specialty store,” said Mr Cain.
The extensive convenience offering includes an extensive vegan and vegetarian range and over 350 lunch and dinner options that customers can prepare in 30 minutes or less.
