She then added a tablespoon of oil and red wine vinegar to a tray before tossing the potatoes around in the colander, adding: ‘Look what I’m doing. Do you see how I have given them a beating?

Jamie continued, “I’m going to cook them in an oven at about 180/190, which is about 350 Fahrenheit, for a period of about 50 minutes.”

After around 40 minutes of cook time, the chef took the potatoes out of the oven and used a potato masher to gently press each roast down.

He explained: “Take the pan out of the oven after 40 minutes, put the potato masher on top and then let it pop and let the lovely starch inside swell up.”
