“When you’re starving and you just don’t mind cooking, but you want something nutritious and not very processed and unhealthy, I mix this up and now it’s a staple that I really like.”

The simple curry recipe calls for an 80c can of lentils, a 95c can of coconut milk and a pack of $2 broccoli and cauliflower florets from Coles.

The mother simply throws all the ingredients into a pot and cooks them together until the curry is simmering.

Method:
